Fedora for me. the speed of response to BZs is the best I've seen, and everything works out of the box, without trying to be like windows (like ubuntu/pclos/opensuse do)

I'm no expert on HP controllers, best guess would be to get the exactly same type of drives you already have

Loads of books out there, but for a complete beginner, I'd go with either Fedora 11 or Ubuntu 9, and pick the "Perfect Desktop" tutorial from howtoforge.com

OpenVZ can only provide unix/linux containers, it's basically an extremely enhanced chroot jail, so if your VPS is windows based, you need something else
