Video card- 2 old or 1 new?

hello,
I am looking to buy a new graphic card but I am not sure if I should buy one new one or just get a 2nd of my older version since my computer is SLI ready.
I have a Geforce 8600 GT right now.
main thing that will make up my mind is, I want to play the game crysis it says for Recommended - GPU – NVIDIA GeForce 8800 GTS/640 or similar
So what I want to know is will 2 8600's work or would it be in my best intrest to buy 1 newer one (maybee a 2nd down the road)
This is not the only reason i need a good card, I do alot of video editing and 3d animation.
