customizeing gnome desktop

Hi All,
Can any one give me some info on aultering the menu in redhat/fedora it would just be nice to hit the menu button and see only a few things that then expanded to ferther menus of stuff, i hate to say it but a bit like the windows start menu, very few icons till you get to programs>>.
oh yes i'm running the gnome desktop
