Well Licker first of all, it kind of depends on which OS's your talking about and if it is a network environment or not! Here are some suggestions:
If its Linux to NT Domain (look here)
A Pegasus email server
A linux Redhat email server (warning PDF!)
For a good service, a gateway might be good (filter)
Email accounts
A IIS 5.0 on windows 2000
