Running a defrag on production servers...need tips

hey all, i'm looking for tips and procedures on how to run defrags on production servers. all of our servers (only 9) are running win2k server edition, with scsi drives. we also have SQL server and exchange 2000 running. if anyone knows the procedure, whether we need to stop services, shut down servers while doing this, anything at all, the help would definitely be appreciated. also we have a 100 node env. thanks.
