I have an iPhone 3g. I use the Notes app, and the Voice Memos app. I'd like to transfer the notes I have written, and memos I have recorded, to the Mac. Can this be done? The iPhone is synced (and therefore backed up) daily, so there must be backup files held on the Mac but I can's find how to access those. Any clues? ....

Aha, I've worked it out myself. Email the notes to my emailbox. Easy. But I'm still wondering about the voice memos. Can I access those on the Mac after the iPhone has synced?
