Windows 2003 mail issue

I have just upgraded our windows 2000 server to a far greater spec windows 2003 module. I`ve also migrated the mail software across and double checked all the settings and user accounts. Every thing appears as it should however our responce times for mail delivery and sending have practically doubled, to a point where remote clients time out.
Has anyone any suggestions as to why this might be and how to resolve it ?
