Playing around with WinDbg, I'm wondering how to view details of every Process object instance (I'm assuming there is more than one).

WinDbg reports I have an object named: ntkrnlmp!_EPROCESS

with members:

Am I looking at the right object for viewing information about running user-mode processes? I want to at least see the PID information from it. Any information is helpful (including how to use WinDbg).

The answers to your questions are very involved and call for more of a tutorial rather than a couple of summarised paragraphs.
