why do most technicians unplugs the ethernet port before installation of the OS?

To stop the chicken from crossing the road.

Or perhaps close the window of opportunity to malware when the OS is only partially installed, with network up and NO firewall configured.

This is done in order to avoid conflict so that when the bios is resolvin to find the os thru the cd rom or the lan connection.
