Are you sure you want to learn Symbian instead of Qt? Symbian is dying out and sole producer of Symbian phones Nokia is pushing Qt on their devices.
Well if you still wants to read on Symbian then you can try S60 Programming: A Tutorial Guide (just make sure you have exact same version of Symbian as book suggest otherwise you get into hell of trouble) or you can try Developing Software for Symbian OS: A Beginner's Guide to Creating Symbian OS V9 Smartphone Applications in C++
In case you changed your mind and want to learn Qt then you can try Qt for Symbian or Beginning Nokia Apps Development: Qt and HTML5 for Symbian and MeeGo
