Using SBS2003 to host DHCP between pre-existing router

I am trying to setup a test environment for our newly developed system.
My boss wants me to setup SBS 2003 server with DHCP service behind the router with pre-exisitng servers which one of them host DHCP.

New SBS2003 server has two NIC cards so I was wondering if I can have one NIC (NIC1) card connect to preexisting network and obtain ip from router and have the other NIC (NIC2) to connect to clients via switch and host DHCP service to the clients.

I know SBS2003 is an old OS but I really need your help.

SBS should have a static IP. Not a best practice to obtain IPs for servers. DHCP is for clients. NIC 1 can be used to connect to the network. Router -> Switch -> SBS and Clients. That is the normal way doing this. What kind of a prex network you have? Are you planning to use sbs as the DC?
