Could anybody please tell me what is the advantage of declaring variables to be of an interface rather than class type?

My computer science professor will probably yell at me for saying this, but I'm not sure other than having an interface for a class is the same advantage as having like a prototype for a method.

as of September 2003 Computer Science standards have switched vocabulary terms "prototypes" are now known as "signatures", "functions" are "methods" and so on ;)
