IRC servers and channels help

Hi everybody,
If i create my own IRC channel, will the server admin be able to see the chat and the IPs of users ?
What do i need to get an anonymous chat ? I mean that nobody can see the IPs etc.
Sorry if im not clear but im new to irc and doesn't know anything about it.

use cgi:irc or a vpn if you want to hide your ip ultimately theres not much you can do about server admins reading chats in channel and if one or both of you are not on ssl pm's as well if you're that worried about it run your own network and make it passworded/ssl only
