Take a moment to clarify if the issue is overwriting a file or is it the topic question?

overwriting file

You can specify the download filename in the Output method, and also the type of output (destination)
$pdf->Output($destination, $filename);
(NOTE these arguments are reversed in the TCPDF derivative for some reason)
