How about employee time tracking application? It could consist of an Access or SQL database with a few tables and would involve both looking up and modifying the data. At the end of each pay period, it could output the amount the employer should pay. You could possibly include taxes as well. You could also include reports of what the employee was working on, how many hours it took and how much the employer spent on said project.
Personally, I'm working on a manufacturing and repair system but it's far from being able to have outside help, plus it's kinda complex. >_>
