I updated JDK/JRE to the latest Java SE 7 version but I was wondering what's the environment path to it.

I remember Java 6 Update 26 used to be C:\Program Files (x86)\Java\jdk1.6.0_26\bin

So would Java SE 7 be something like C:\Program Files (x86)\Java\jdk1.7.0_00\bin

I wasn't quite sure because this version doesn't have update # yet.

Did you note where the install put it files? Look in that directory for the bin folder.
The path to my version 7 bin folder is:
D:\Java\jdk1.7.0\bin
