I want to know , how twitter adds twitter@twitter.com to Gtalk to update a user group posts through IM. If anyone has any idea then do reply me.

Because GTalk uses a open standard protocol called Jabber/XMPP. Anybody can connect to GTalk using that protocol and exchange data.
