I am doing a small researach on SEO and found some tutorials
where authors claims that static IP makes Google ranking much
higher than dynamic IP.

I do understand it, that dynamic IP is highly disadvantageous factor
against the static IP because there is not possible to index properly
something continously changing.

My main question is what is SEO status of shared IP, when the same
IP is assigned to multiple domains ? Is there really necessary to
have an unique IP to get a good ranking or is shared IP acceptable?

I've never heard this before, and a priori it seems wrong. Google indexes information by domain name, not IP address.

If what you read is true, then a site like http://www.kensharpe.net might rank very high, then decide to switch web hosts for whatever reason. The site is moved without a hitch, and there's no visible difference except now the server IP is different. The site now drops in rank because of that?

I don't believe it, I don't think it's true.
