A little bit late but ...
My googling shows the opposite. I'm seeing that Odoo developers are high in demand because there are more job offers than people with the skillset to fill those jobs. Therefore, if it's something you're really interested in, and would enjoy doing, I say go for it!
I'd rather be one of the top experts in a field that not a lot of people know how to do, than be yet another one of a billion generic python developers.
